Asparagus Risotto

Dinner For One Or For All

Ingredients


Risotto Rice
Onions
Garlic
Asparagus
Parmesan Cheese
Chicken Stock
White Wine


Brown onions in olive oil
Add risotto
Add crushed garlic
Stir. Make sure the rice has absorbed the onions, garlic & olive oil
Splash in glass of white wine
Add chicken stock
Cook on medium heat for about 13 mins with lid on
Add asparagus - I like them chopped into little 1cm bits
Add Parmesan Cheese

(Add more wine or stock if needed).

Stir and cook until rice is done
Season Salt & Pepper
Add chopped parsely or basil (optional)

Serve with extra Parmesan shavings

Baked Seabass With Lemon, Soy Sauce & Spring Onions

Benny loves this dish. He always takes out the bones for Anja. x

This is a simple dish to prepare and great to impress guests. You can prepare this earlier and then bake about 45 mins before serving in which you can spend time with your guests.


Ingredients:

Seabass
Soy Sauce
Spring Onions
Lemon (Or Lime, Or Both)
Ginger
Onions
Garlic
Brown Sugar
Olive Oil


Lay Seabass on baking dish
Stuff belly with ginger, onions, garlic
Place sliced lemons on the fish
Drizzle with olive oil
Cover with foil
Bake - about 30 mins

Meanwhile...
Prepare sauce
Soy Sauce in pan, add a couple spoons of brown sugar
Squeeze of lime or lemon
Adjust to taste.


Then take the foil off fish dish
Add the sauce to the dish
Bake further 15 mins

Garnish with thinly sliced Spring Onions (the long way)
& Corriander (optional)

Serve With Steamed Rice

Corriander/ Or Thai Sweet Basil Chicken With Lime, Fresh Onions & Chilli

This is a very simple and quick healthy meal. One of my mum's best! Make the whole chicken and eat now or tomorrow in a sandwich or add it to some salad leaves. Otherwise, use thighs - the meat is very tender.


Ingredients:


Chicken
Corriander &/ or Thai Sweet Basil
Lime
Rice Wine Vinegar
Fresh Red Chilli (optional)
Thinly Sliced Red Onion & Shallots


Boil Chicken (with some salt & chicken stock cube)
Once its done, tear/ shred up the chicken into bite sized pieces with your hands or a fork
Squeeze on some lime
Add Onions & Shallots
Small Splash Of Rice Wine Vinegar
Add Red Chilli (red so you can see them)
Salt & Pepper To Taste
Garnish With Corriander/ Basil
Mix it all up with your hands

Serve With Steamed Rice


Luu's Soy Sauce

Olive Oil In Pan
Add Sugar -
A bit of Chicken Stock
Soy Sauce
Lime

Adjust to taste
Add some chopped spring onions (optional)


Luu's Fried Greens

Whatever you can get your hands on - or whatever is in the fridge:
Pak Choi/ Choi Sum/ Spinach/ Spring Greens/ Asparagus/ Green Beans/ Mange Tout/ Courgette... etc.

Hot Pan
Olive Oil
Chop Veg & Fry
Add Crushed or Sliced Garlic
Add Oyster Sauce (optional) or Salt & Pepper

ENJOY

King Prawns Linguine

Ingredients:
Linguine
King Prawns
Onions
Garlic
Fresh Tomatoes
Parsley
White Wine
Chicken or Fish Stock
Fresh Chilli


Brown Onions In Olive Oil
Add Chopped Tomatoes
Fry
Splash White Wine
Throw In Crushed Garlic
Pour In Stock
Lid On, Cook On Medium Until Soft
Add Salt & Pepper To Taste
Add Sugar To Taste
When Tomato Sauce Is To Your Liking:
Leave Shell On Prawns, Add To Sauce
Splash White Wine
Lid On
Cook with Prawns For About 3 mins (until prawns are pink)
Add Parsely & Fresh Chilli

Serve

Linguine/ Spaghetti
(Barilla/ De Cecco)
